Fazenda Santa Maria is located near Espirito Santo do Pinhal, a town in Mogiana, Brazil. It was founded over 50 years ago by the Filho family, who came from Italy seeking economic opportunities and a better future in Brazil. Over 170 hectares of the farm's 360 total hectares are dedicated to coffee cultivation. This fertile mountain terrain is perfect for Arabica coffee crops grown without chemical fertilizers and pesticides.
All beans are hand-picked and dried on a 37,000 square meter patio. When necessary, drying is completed in rotation by mechanical dryers to ensure uniformity. All processing is natural, including fermentation, which is done directly on the estate.
The farm owners are committed to sustainability with high social and environmental standards. All coffees are grown and processed according to rigorous organic and biodynamic standards, including soil detoxification, the absence of agrochemical products, manual weed control, and conservation of native species. They have also shown a strong commitment to social projects that improve workers' living standards.
This coffee is certified organic.
Our coffees have the significant characteristic of being roasted in an artisanal manner, where only experience and human oversight achieve the optimal level of roasting. The success of the roasting process lies in finding the right balance between time and temperature.
Notes on South American Coffee
The introduction of coffee to South America dates back to the 1700s, brought by the Dutch and French colonies.
Subsequently, coffee seeds were smuggled into Brazil. Today, coffee is cultivated in many South American countries due to its favorable climate.
Their light acidity and the classic taste of Arabica coffee distinguish the products of this region. They are generally considered coffees with bright flavors and a pronounced aftertaste.
